Dairy-free, gluten-free, low in refined sugars. We love the simple sweetness and how easy it is to make. We can our apple filling in quart-sized ahead of time so we have a quick, crowd-pleasing dessert.
FILLING:
6 cups peeled, cored, sliced apples
1 tsp cinnamon
1/4 tsp nutmeg
Sprinkle of tapioca
Drizzle of maple
1 TB lemon juice
TOPPING:
3/4 cup almond flour
2 TB tapioca
1/4 cup melted coconut oil or half and half with butter
3 TB maple
1 TB almond milk
1 tsp baking powder
1 tsp vanilla
1/4 tsp salt
Combine all filling ingredients into a pan over medium heat and cook until they start to soften. Preheat oven to 375°. Pour into 8×8 pan. Combine all topping ingredients and mix well. Spoon topping over the apples and spread evenly. Bake for 25-30 minutes or until the top starts to brown. Let sit 10-20 min before serving. To reheat (if there is any left), place in the oven at 300° until warm through.
